Blondies Topped With Homemade Cherry Sauce
1 cup Brooklyn Buttery maple butter plus more for pan
2 1/2 cups all-purpose flour, plus more for pan
1 and 1/2 teaspoon baking powder
1 and 1/2 teaspoon kosher salt
4 large eggs
4 teaspoons vanilla extract
3 cups plus 4 tablespoons brown sugar
16 ounces pitted cherries
1/2 cup granulated sugar
1/2 cup water
1 tablespoon cornstarch
1 tablespoon lemon juice
Preheat oven to 350 F
Grease your 9x6 baking dish with butter.
Melt your 2 sticks of butter over medium low heat. Allow to cool.
In a glass bowl whisk together flour, baking powder, and salt.
Add eggs, vanilla, and brown sugar to cooled butter.
Fold in dry ingredients to wet ingredients. Pour mixture into greased baking pan and bake for 30-35 minutes or until knife comes out clean.
Pit 16 ounces cherries.
To a medium sized sauce pan add cherries, 1/2 cup sugar, and 1/2 cup of water and bring to a boil over medium heat stirring often.
In a separate small bowl stir together lemon juice and cornstarch. Add to boiling cherry mixture and stir constantly for 1 minute until sauce thickens.
Remove from heat and cool to room temperature.
Serve over blondie and enjoy!
